Chef Umberto Bombana is hailed as the “king of white truffles.”

Italian chef Umberto Bombana, of Hong Kong’s three-Michelin-starred 8½ Otto e Mezzo Bombana, will take over the kitchen at The Sukhothai’s old-school La Scala restaurant on May 23-24.

Hailed as the “king of white truffles,” chef Bombana’s Italian restaurant is the only one outside of Italy to hold three Michelin stars and was also voted No.13 in Asia’s 50 Best Restaurants 2018.

For lunch and dinner, he’ll prepare extravagant dishes like white asparagus and Oscietra caviar, warm langoustine over a salad and egg emulsion, and tagliolini with butter, parmesan and black truffle fondue.
